Grilled chicken for dinner

In our caveman ways, there is not much more I love than grilled chicken.  I don’t know if it’s because they are too stupid and easy to catch, or because they are too stupid and easier to buy.  Nonetheless, they taste awesome when I finish with them on grill islands.  I buy them whole.  They’re cheaper that way.  Besides, I want to eat the chicken, not some part someone else decided I was going to have.

Cut the yard bird up into the nine known pieces (the fried chicken places do not know what these are).  Start with some really good mustard, vinegar, salt, pepper, thyme (lots), red pepper flakes, and some beer to soup it up.  Marinate in this for a few hours.  Make sure you have the right outdoor kitchen supplies for this.  It’s now time to have some fun.

Turn up your island grills so they have time to get good and hot.  The idea is to cook the bird, not watch it suffer on low heat.  Besides, I’m getting hungry just telling you about this.  Now shake on a little chili powder and cayenne pepper before you put on the grill.  A little heat never hurt anyone.  A lot of heat made someone drink a gallon of milk to put it out.  That’s another story.  Be sure to wipe a little oil on the grill with an oiled paper towel to keep the bird from sticking.  Now place it where you want it, and stand by.  Yard bird is not a slow cooker, and you really don’t want to burn it.  You spent too much time marinating it in the sauce you made.  Sure would be nice to taste it.
