Given a choice between gas or charcoal for grilling, give me gas every time. Charcoal is a pain in the neck because you have to wait so long for the coals to get just right. With gas, you just turn a knob, and whoosh, you have flames.

Now that I have a grill island in my backyard, I can’t live without it. Even when we don’t have company, I love cooking dinner over it. I’ve gotten good at grilling everything, including stuff like slices of eggplant or zucchini slices.

I used to have a portable gas grill, but having a drop-in grill in a BBQ island is much more convenient. You get lots of counter space for your marinating dishes and cooking tools.

Drop-in grills are great. Now that we have ours, we use it all the time. About the only time we don’t grill outdoors is when it’s raining or too cold. There’s nothing like a plate of grilled chicken.

This blogger’s crazy. A steak cooked in the broiler is never as good as one you grill outdoors over charcoal or a gas flame. Accept no substitutes.
